Food Photo Friday - Chick Peas Again


I received a lot of positive feedback on my last chick pea recipe, so I thought that I might continue the theme. Chick peas are very nutritious and I find that children enjoy them despite this fact. They are high in protein, dietary fiber, vitamin B6 and folate. They are very low in saturated fat and cholesterol. Did I mention that they are also delicious and very snack-able?

This recipe is very flexible and contains a lot of yummy ingredients. Feel free to substitute and change quantities to suit your tastes. This recipe can handle that.

SUMMER HEARTS OF PALM AND CHICK PEA SALAD


    Salad

    • 1 1/4 cups canned chick-peas
    • 1 cup coarsely chopped tomatoes
    • 3/4 cup hearts of palm
    • 3/4 cup pitted black olives
    • 1/4 cup chopped scallions
    • 1/4 cup chopped parsley

    Dressing

    • 2 tablespoons olive oil
    • 2 tablespoons lemon juice
    • 1 small garlic clove, pressed
    • 1/4 teaspoon dried oregano
    • 1/4 teaspoon freshly ground black pepper

Directions

  1. Toss together all salad ingredients.
  2. Whisk dressing ingredients in a small bowl.
  3. Toss vegetables with dressing until thoroughly combined.

Yum! In our house, we can't slice up the olives, though: the boys refuse to eat them unless they can stick 'em on their fingers first...

I'm more of a flat-leaf than curly-leaf parsley man myself, but your version looks prettier. For so little salad, isn't it a shame to get such a big bowl dirty? :)

Tons of variations on this theme...
other veggies that could go in there: seeded diced cucumber, minced red onion, chopped lettuce of any kind.

dressing variations: sprinkling of dry mustard, a splash of wine vinegar (red, white, or balsamic) in place of the lemon juice, shallots instead of the garlic.

I agree with everything you said about chick peas except the very yummy part. let's get real, and save that term for cake or chocolate. instead, how about, "palatable for something so full of vitamins"? or, "a healthy alternative with a distinct flavor"?
or just, "frankly I can't stand their taste but you grow to like it if you need to eat healthy"

my kids love to take this type of salad for school lunches. it holds up mch better than a salad with lettuce and is more filling as well. it's great with some bulgarian or feta cheese mixed in, or even some canned tuna.

Great salad. But why canned chickpeas? Soaked and cooked are much better. A great addition is roasted sesame seeds. Also a teaspoon of Mcilhenny's green tabasco sauce gives it a little zing.
